Rocoto chile peppers are excellent for salsas. They are quite spicy, so a little bit can go a long way. They resemble small bell peppers. Make sure not to mistake these for baby bell peppers — they can be a fiery surprise!

Rocoto chile peppers have a long history in Peru and are well-known and used throughout Peruvian cuisine. Evidence of these peppers was discovered in the Guitarrero Cave, located less than 500 kilometers north of Lima District, and dates to sometime during the 8th millennium B.C.E.
