Made with Aji Amarillo, The flag chili of Peru and the Exotic Inca herb Huacatay, Black Mint. These two together made an amazing and versatile sauce. This sauce is the traditional Rotisserie Chicken, Pollo a la Brasa Sauce from Peru. This version is the best I remember of how my grandmother used to make it.

The surprise is that this sauce is not only good with rotisserie chicken, but it also goes well with barbecue, Chinese food (Chifa), sea food, sandwiches, and the fans favorite wings. That’s right, you order your wings naked, and you pull your Huacatay sauce and pour generously on your wings.
